Dinner: Homemade spicy popcorn chicken.

Dinner: Homemade spicy popcorn chicken. The stuff in the middle is a fancy dipping sauce I concocted by whisking together Dijon mustard and some Archer Farms brand citrus-ginger glaze (♥ you, Target!). Yeah, the sauce is in a jar lid, and served on a plate covered with a napkin from a coffee shop, ’cause I’m thrifty like that… I’m sure Eco-friendly homemaker Mellodi Parks would approve 🙂

Not pictured: steamed broccoli on the side (because even though broccoli’s good for ya, it’s not as drool-worthy in a pic…although I did toss it with some slivered almonds and drizzled some chili sesame oil over the top).

I just took some beef broth, can of tomatoes, some dried beans I cooked, some sweet corn that I cut off the cob, and whole wheat penne, put it all in a pot to simmer, with onions, garlic and taco seasoning.
